Its can be prepared instantly and makes a healthy breakfast for your busy mornings or a quick snack or light lunch/dinner. Now, for those of you who do not know about dosa, it's a traditional south Indian breakfast. It's not only popular in south India but all over the world. Then grinding them into a batter, and fermenting it for another 8-10 hrs etc. But with this recipe, we can make dosa tasting almost same as the traditional dosa instantatly. And the best part without the amount of rice that goes into its making, that is, minus great deal of carbohytrate. 1. Dry roast rolled oats on a pan until it turns aromatic and cool it and transfer it in to a mixer/blender.

  2. Dry roast samolina also and set it aside to cool.

  3. Dry roast flattened rice and tranfer it to the mixer along with oats and when it cools blend it it fine powder and set aside.

  4. Finely chop the following ingredients : onion, green chilli, curry leaves, coriander/cilantro leaves, ginger and set aside.

  5. In a deep bowl, mix well finely powdered rolled oate and flattened rice, samolina/rava, finely chopped ingredients, asafoetida(optional) and salt to taste

  6. Add 1/2 cup fresh yogurt to the bowl.

  7. Then add 1 cup of water mix well untill everything is well combined forms dosa consitency

  8. Finally rest the batter for ten minutes and check the consistency. If the batter is thick then add required water little by little. (For the consistency check the video)

Making dosa

  1. Heat the pan / griddle / skillet over medium flame.

  2. Wipe the skillet with a cloth dipped in water or silicon brush dipped in water

  3. Immediately pour 2 ladle full batter and quickly spread in a spirally motion from the center to form dosa. Don't spread it too much just about 5-6 inch in diameter.

  4. And when both sides are brown remove it from the pan.

Section 5 : Storing instructions

Any batter that is leftover stores well for a day in the refrigerator. However, while making dosa with the leftover batter from the fridge, check the consistency and if it has become thick then we will have to add little water. Now, if you plan to make it ahead of time then don't prep the batter with onions, green chilly, curry leaves, coriander leaves etc. Mix only the flours with yogurt and water. And refrigerate overnight. The next day add the finely chopped oinions, green chilly etc. The batter will thicken a bit after refrigeration so add some water next day to get the right consistency before you make the dosa. (check the consistency in the video)
