These carrot-date Energy Balls or Laddu are made using, carrot, dates, oats, almonds, walnuts, pumpkin seeds and coconut. It's flavoured using cinnamon. It is gluten free. These are super healthy. There is no added sugar or oil, yet It is so sweet and delicious. It’s a treat you can enjoy guilt-free. Also, its super easy to make. Kids will love it. It's ideal snack option, perfect for packing in kid's lunch boxes. Also, it's a great energy booster post workout.
I have a sweet tooth. However, one or the other reasons right from my teenage years I had to avoid sweets. And I always wished there was this sugar-free, oil-free treats so that I could eat without any fear or guilt. And this super easy no-bake energy/protein balls, I must say was like a dream come true. Everyone at my home also love sweets so this is one of our family favourite recipe. It almost tastes like carrot-date cake. It's a good treat for any festive occasions as well.
No-Bake Carrot-Date Energy / Protein Balls or Luddu Recipe
Section 1: Ingredients required
Ingredients required for making the energy balls/laddus:
¼ cup almonds
1/4 cup rolled oats
¼ cup walnuts
1/8 th cup pumpkin seeds
1/4 cup desiccated coconut
1/2 cup de-seeded soft dates, nearly 100 grams
2 medium sized grated carrot, nearly 120 grms.
½ tsp of cinnamon powder
Ingredients for coating the energy balls or laddus:
2 tbsps of black and white sesame seeds
2 tbsp grated dark choclate chip or any dark choclate of your choice
2 tbsp desiccated coconut

Section 4: Directions
First dry roast individually rolled oats, almonds, walnuts and pupkin seeds individually until it turns aromatic and set it aside. Also, dry roast black and white sesame seeds and set aside for coating.
When the roasted ingredients have cooled then transfer it to a mixer/blender along with dessicated coconut and dates. And blitz it until all the ingredients are well combined and forms coarsely ground mixture.
Finally add grated coconut and cinnamon powder and blitz it again.
Now, it forms wet and sticky dough consitency.
Form equal sized balls with a measuring spoon and coat it in grated choclate, dessicated coconut, black and white sesame seeds. Or you can coat it with any coating of your choice.
Serve it after storing in the referegrator for 15 to 20 minutes.
