The Recipe of how to make vibrant beetroot hummus

serves : 2-3 people

1 cup cooked chickpeas
2 tbsp tahini 2 tbsp lemon juice
2 tbsp olive oil 1 garlic clove 1 roasted beetroot 2 frozen cubes of aquafaba or ice cubes ¼ tsp ground cumin ¼ tsp salt
4-5 tbsp water or as needed

Drain and rinse the chickpeas (if you are using canned chickpea). If you are preperaring from the scratch, soak the chickpeas for 8-10 hours and rise and cook in a pressure cooker over low to medium flame for 5-6 whitles and then allow to release pressure normaly. You can de-skin before draining the water or use it with skin(it is good to use with skin as it has more fibre content). Measure 1 cup chickpeas and set aside.
Preheat your air fryer to 390°F (200°C).
Peel the beetroots and cut them into small cubes or wedges.
In a bowl, toss the beetroot cubes with olive oil, and pinch of salt. Make sure the beetroot pieces are evenly coated with the oil and seasoning.
Spread the beetroot cubes out in a single layer in the air fryer basket.
Roast the beetroot in the air fryer for 15-20 minutes, shaking the basket every 5 minutes to ensure even cooking. The beetroot should be tender and slightly caramelized when done. Once done, remove the beetroot from the air fryer basket and let cool for a few minutes before using them in your beetroot hummus recipe.
In a food processor or blender, add in the chickpeas, tahini, lemon juice, garlic clove, frozen aquafaba, roasted beetroot, ground cumin, and salt. Pulse the ingredients together until they are well combined and form a smooth, creamy texture. If the mixture is too thick, you can add a tablespoon or two of water to thin it out.
Taste the hummus and adjust the seasoning to your preference. Add more lemon juice or salt as needed.
Transfer the beetroot hummus to a serving dish and garnish with additional roasted beetroot or sesame seeds. Serve with your favorite veggies, pita chips, or crackers, and enjoy!
