Now, I use the magicc of air frying, and create a tantalizing treat, believe me it will have you hooked from the first bite. Recipe of the Ultimate Air-Fried Bitter Gourd Rings

cooking time: 20-25 minutes

  • 1 medium-sized bitter gourd

  • 1 tablespoon rice flour

  • 1 tablespoon chickpea flour

  • 1-2 tablespoon canola oil or any other vegetable oil + 1-2 tsp for greasing the air fryer basket

  • 1/4 teaspoon turmeric powder

  • 1 teaspoon chili powder (adjust to your spice preference)

  • 1 teaspoon dry mango powder (amchur)

  • 1/2 teaspoon cumin powder

  • 1/2 teaspoon garam masala powder

  • Salt to taste

  • 1-2 tsp of water(if required) to mix

Air-fryer(if you do not have a air-fryer you can deep fry in the oil as well)

Step 1: Wash the bitter gourd


Soak the bitter gourd in salt water for at least 15-20 minutes and wash the bitter gourd thoroughly under running water. Slice it horizontally into thin, round pieces. Remove the seed.


Step 2: To remove bitterness(optional)

Place the bitter gourd slices in a bowl and sprinkle salt over them. Toss gently to ensure all the slices are coated evenly. Let them sit for about 15 minutes. This step helps to reduce the bitterness of the gourd. After 15 minutes, rinse the bitter gourd slices with water to remove the excess salt. Pat them dry using a kitchen towel or paper towels.


Step 3: Add the spices

In a mixing bowl, combine turmeric powder, chili powder, dry mango powder, rice flour, chickpea flour, cumin powder, and garam masala powder. Mix well to create a flavorful spice blend.


Step 4: Pre-heat the oven

Preheat your air fryer to 375°F (190°C) for a few minutes.


Step 5: Coat the bitter goured with spices

Place the dried bitter gourd slices into the spice blend mixture. Toss them gently, ensuring each slice is coated with the spice mixture.
