Recipe of Heavenly Chocolate-Coated Stuffed Dates with Cashew Nuts


Section 1: Ingredients

  • Dates, preferably Medjool or any soft variety, pitted

  • Cashew nuts, whole or halves

  • White chocolate chips (1/4 cup) or cooking bars 2 pieces chopped

  • Dark chocolate chips(1/4 cup) or cooking bars 2 pieces chopped

  • Sugar Strands

  • 1 tsp of Chopped cashew nuts

  • 1 tsp of dessicated coconut

  • Peanut butter/ almond butter for stuffing

  1. Prepare the Dates: Start by selecting fresh, plump Medjool dates or any soft variety and carefully remove the pits. Make sure the dates are not overly dry or cracked, as they may not hold up well during the stuffing and coating process.

  2. Stuff the Dates: Take a cashew nut, either whole or halved, and gently press it into the cavity left by the removed pit in the date. Repeat with the remaining dates and cashew nuts until all the dates are stuffed.

  3. Melt the Chocolate: In separate bowls, melt the white chocolate and dark chocolate. You can use a microwave or a double boiler for this. If using a microwave, melt the chocolate in short bursts of 30 secs, stirring in between to prevent burning. If using a double boiler, place a heatproof bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water, and stir the chocolate until melted.

  4. Coat the Dates: Using a fork or a toothpick, dip each stuffed date into the melted white or dark chocolate, allowing any excess chocolate to drip off. Place the coated date onto a parchment-lined baking sheet or a wire rack to allow the chocolate to set. Repeat with the remaining dates, alternating between white and dark chocolate coatings to create a contrast.

  5. Optional: Decorate (optional): While the chocolate is still wet, you can decorate the coated dates with additional toppings such as chopped nuts, sugar strands, shredded coconut, or a drizzle of contrasting melted chocolate for added flavor and visual appeal.

  6. Set and Serve: Allow the coated dates to set at room temperature until the chocolate is firm. Once fully set, transfer the chocolate-coated stuffed dates to an airtight container and store them in the refrigerator until ready to serve.
