The Perfect Ripe Banana Kalan Recipe
Cusine: Kerala
Serves : serve 3 to 4 people as a side dish or accompaniment. If the banana kalan is served as a main dish, it may serve fewer people.
Section 1: Ingredients Required
2 ripe bananas but not over ripe (nearly 1 cup full when sliced)
1 cup fresh plain yogurt
1/2 cup grated coconut
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
2-3 green chillies
1/4-1/2 teaspoon chilli powder
1/2 teaspoon mustard seeds
1/4 tsp fenugreek seeds
2 dried red chilies
A few curry leaves
2 tablespoons coconut oil
1/2 cup water
3/4 tsp Salt or to taste

Peel the bananas and cut them into small pieces. Add them to a pan along with 1/2 cup of water, turmeric powder, chili powder, and salt. Cook the bananas until they are soft and well cooked.
Add the coconut-cumin mixture to a blender and blend it well and set aside.
In a separate pan, heat coconut oil and add mustard seeds, fenugreek seeds, saute this mixture for a few seconds until the mustard seeds start to pop, then add dried red chilies, and curry leaves.
Trnasfer red chilli and part of the tempered mixture in a bowl to add at the end.
In the rest of the tempered mixture add ground coconut and cumin seeds mixture along with a table spoon of water and saute till the cumin turns aromatic and water is all tried up. And allow this mixture to cool.
Now, beat the yogurt with salt, then add sauted coocnut-cumin mixute and mix it all well until everything is well combined.
Finally, add the yogurt-coconut mixture to the cooked bananas and mix well.
Cook this mixture with continious stirring on low heat for 2-3 minutes until it just comes to the boiling point. Immediately put of the flame and add the reserved tempering mixture.
Your ripe banana kalan is now ready to be served hot with rice.
